Pinto Bean and Sweet Potato Chili Recipe

  • 1 T. olive oil

  • 1 medium onion, chopped

  • 2 tsp. chili powder

  • 1 c. veggie broth or water

  • 10 oz. skinned sweet potatoes, cubed

  • 16 oz. Mexican style stewed tomatoes

  • 15-16 oz. drained pinto beans

  • 3 T. fresh cilantro

  • 1-1/2 tsp grated orange peel

Heat olive oil then saute onion, add chili powder, broth, and sweet potatoes. Cover, reduce heat, simmer until sweet potatoes are tender (about 10 minutes). Add tomatoes with juice and pinto beans, simmer uncovered 10 minutes; add cilantro and orange peels.
